Egg white and turkey scramble

8 egg whites
1 pound lean ground turkey or tofu
2 cups shredded spinach
2 tomatoes
1 clove garlic, minced
Sea salt and black pepper

Cook ground turkey or tofu in a medium skillet until cooked through and lightly browner. Drain.
Scramble egg whites until dry, add to cooked turkey.
In small skillet, lightly sauté tomstoes, spinach and garlic.
Combine all ingredients
